The Best "Leftover" Salad for Work or School Lunches

Do you have one or all of the following?         

- A leftover salad from last night’s dinner

-A few tuperwares

-Canned fish, leftover chicken, steak, or tofu

Chances are, you don’t want to eat the same thing for lunch EVERY DAY OF YOUR LIFE. Am I right? Who knows? All I know is that I sure don’t want to. I mean, I have to be completely honest: There’s nothing better in my book than a good peanut butter and honey sandwich. But hey, what if I run out of peanut butter? What do I do then?

So, in an attempt to jazz up work or school lunches, why not try a “leftover” salad for a change? Now, what is, exactly, a “leftover” salad? It's a salad that is, (drum roll, please…) MADE WITH LEFTOVERS! WOW! How crazy is that?

Any meal that makes use of leftovers may not sound too exciting, but what is exciting is this: Less prep-work. Less stress. More nutrition. Now who wouldn’t want that?

So what goes into a leftover salad? Well, let’s think back a moment…what do you remember having for dinner? Did you fix some vegetables? Maybe some chicken or fish?

Simply throw a few handfuls bagged lettuce or spinach and cut up veggies in a large tuperware and slice some leftover meat or put some canned salmon or tuna on top. You could also slice up tofu  instead of meat. Then pack a small tuperware with salad dressing that can be tossed on at lunchtime.

Ideally, at dinnertime, make some extra salad and leave the dressing off. Then save it for lunch the next day. You can also throw on some rice, small-shaped pasta, olives, nuts, dried fruit, or PRETTY MUCH ANYTHING IN YOUR PANTRY OR FRIDGE!
